Cream of Cauliflower 

​Ingredients

  • 2 cups purified water

  • 2 cups cauliflower

  • 1  onion

  • 1 clove garlic

  • 1 tablespoon nutritional yeast

  • 1 cup  raw cashews

  • 1 /2 cup  shredded coconut

  • 1 teaspoon Italian seasoning

  • salt and pepper to taste (optional)


Method

  1. Put all the ingredients into the Vitamix  container secure the lid.

  2. Blend for 4-6 minutes or until desired temperature is reached.

  3. Serve

Curried Ginger & Carrot 

Ingredients

  • 1 tablespoon coconut oil

  • 1 cup sweet onion, diced

  • 3 cloves garlic, minced

  • 1 tablespoon ginger, minced

  • 1 teaspoon curry powder

  • 1/2 teaspoon salt

  • pinch fresh ground pepper

  • 3 cups carrots, roughly chopped

  • 3 cups water

  • 1 cup fresh orange juice


Method

  1. In a large sauce pot, heat coconut oil over medium heat.

  2. Add onions and cook until clear.

  3. Add garlic, and ginger, and cook a for a few minutes more.

  4. Add carrots, turmeric, salt.

  5. Add water and orange juice and bring to a boil.

  6. Once boiling, allow to simmer until carrots are soft.

  7. Allow to  cool and blend until smooth
