Pumpkin Muffins

Ingredients

  • ​2 cups pumpkin boiled and crushed

  • 2 cups whole wheat flour or oat flour

  • 2-3 cups water

  • 1 cup coconut milk                 

  • ¼ cup honey

  • 1 cup raisins

  • ¼ cup molasses , optional

  • ¼ cup wheat germ

  • 1 tbsp vanilla

  • 2 tbsp non-aluminum baking powder

  • 1 tsp nutmeg

  • ½ tsp cinnamon

  • ¼ tsp salt

  • 1 tbsp flax seed ground


Method

  1. Mix all wet ingredients in a mixing bowl  and set aside.

  2. Mix all the dry ingredients and add to the wet ingredients in the bowl and mix well together.  If it is too dry add some more water . 

  3. Pour into a greased baking pan and bake at 350 degrees for 40 – 45 minutes

Pumpkin Chia Pudding

Ingredients

  • 1 cup unsweetened almond milk

  • 2 ½  cups pumpkin cooked crushed

  • 2 tbsp chia seeds

  • 2 tbsp  soy protein powder, optional

  • 1/4 tsp cinnamon

  • 1/8 tsp ground ginger

  • pinch of nutmeg

  • 1-2 tbsp maple syrup, to taste 


Method

  1. In a medium-sized bowl, whisk together all ingredients until fully combined .

  2. Place bowl in the fridge for 1-2 hours to thicken.

  3. Place in small bowls and serve with raisins, walnuts if desired.

Carrot Sticks & Dip

Ingredients

  • ​1 large carrot sliced, blanched

  • ¼ cup cashew mayonnaise


Method

  1. Place cashew mayonaise in a bowl. 

  2. Use the cashew to dip and treat as finger foods or place carrot sticks on a place.

  3. Pour the  mayonnaise over the sticks.
